  • Blue Oyster

    The earthy, rich, and tensile texture is the perfect addition to your favorite dishes. Their caps have a lovely tenderness, while the stems tend to be slightly firmer giving them a nice textural diversity. Great upgrade from white or button mushrooms.

  • Yellow Oyster

    One of the most beautiful Oyster species, also known as Golden Oysters, Yellow Oysters resemble a bouquet of yellow flowers and are popular for their gorgeous color and cashew-like flavor

  • Lion's Mane

    Produces a pure white cluster of icicle-like teeth and a consistency like crab or lobster meat. Due to its consistency and flavor, it can be used as a seafood substitute. They can be cooked like normal mushrooms, as steaks, or even smoked before they are sautéed.

  • King Trumpet

    The largest of the Oyster mushroom genus, they have a wonderful savory flavor, a firm, meaty texture, and an amazing shelf life. Chefs in some of the country’s finest restaurants have remarked on its versatility and will often use it in place of wild mushrooms.

  • Maitake

    A popular gourmet ingredient used by home cooks and professional chefs alike. “Maitake” is Japanese for dancing mushrooms; it’s said to have earned this name because forgers often danced with joy after finding this delicious and healthy mushroom growing in the wild. You may know the Maitake mushroom by one of its Western monikers: Hen-of-the-Woods, Ram’s Head, or Sheep’s Head.

  • Black King

    Chefs adore Black Kings as they are some of the meatiest mushrooms able to be cultivated and make a great substitute for meat. It has all the positive characteristics of a Blue Oyster, along with the meaty stem of the King Trumpet. Some say this mushroom is the best of both worlds.

  • Beech

    When you’re looking for an extra kick of umami, these mushrooms are the right choice. They have a classic savory mushroom flavor and are more bitter than their all-white counterparts. Their gourmet flavor makes Beech mushrooms versatile, and they’re a perfect substitute for shiitake, enoki, and oyster mushrooms in most recipes.

  • Pioppino

    Also known as the Black Poplar mushroom, it has magnificent dark brown caps on long cream-colored stems. The intense forest flavor makes it a natural for pastas, game, and red meats. Goes well in rice, risotto, or stir fry dishes. In Asia, this mushroom is used frequently in soups, stews, and hot pot.

  • Chestnut

    Also known as Cinnamon Caps due to their speckled orange and brown coloration, Chestnut mushrooms have a firm, almost crisp veggie texture, with a nutty, robust flavor.

  • Reishi

    Reishi mushroom is used in Asian traditional medicine to boost the immune system and to promote health.
